Make This Apple Noodle Kugel for Rosh Hashanah!

We’re wrapping up this year’s Rosh Hashanah series with a classic: Apple Noodle Kugel!

Sweet apples, cinnamon, noodles, and a brown sugar crumb topping make this one of those old-school Yom Tov dishes that belongs on the table.

And while this may be the last recipe in our Rosh Hashanah series, we’re just getting started. We have some fun stuff planned for Sukkos, winter, and of course Chanukah, so make sure you’re subscribed and stay tuned!

APPLE NOODLE KUGEL

Ingredients:
• 8 oz medium egg noodles
• 4 apples, peeled and grated
• 4 eggs, beaten
• ½ cup sugar
• ¼ cup brown sugar
• ½ cup raisins, optional
• 1 tsp cinnamon
• 1 tsp salt
• ¼ cup neutral oil

Brown Sugar Topping:
• ½ cup brown sugar
• 1 tsp cinnamon
• 2 tbsp flour
• 2 tbsp neutral oil

Directions:
Preheat oven to 350°F.

Cook the noodles according to package directions and drain. While still warm, toss with ¼ cup oil.

Add the grated apples, beaten eggs, sugar, brown sugar, raisins if using, cinnamon, and salt. Mix everything together well.

Pour into a greased glass 9×13-inch baking dish.

For the topping, combine the brown sugar, cinnamon, and flour. Mix in the oil until crumbly, then sprinkle evenly over the kugel.

Bake at 350°F for about 50–60 minutes, until the kugel is set and the top is golden brown and caramelized.

Let it rest for a few minutes before slicing.
