Classic Arbes (Chickpeas) לכבוד שבת קודש

Start with 250 grams of chickpeas (garbanzo beans). Soak them overnight in the fridge, covered with plenty of water.

The next day, drain and rinse the chickpeas well. Place them in a pot, cover with fresh water, and bring to a boil.

Add ½ teaspoon baking soda to help make the chickpeas extra soft.

Once the water comes to a boil, reduce the heat and let them simmer for 2 hours and 15 minutes.

Then add:
✨ 2 teaspoons salt
✨ 1 tablespoon sugar
✨ 1 teaspoon to 1 tablespoon black pepper (depending on how much spice you like)
✨ ½ teaspoon red pepper flakes (optional)

Give everything a good stir, bring it back to a boil for 15 more minutes, then turn off the heat.

That’s it! Enjoy your Arbes hot or cold. They’re especially delicious served alongside a hot bowl of chicken soup on Friday night.
